  • 2 cups water

  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 ripe avocado, sliced or diced

  • 1/2 cup fresh salsa

Instructions

  1. Cook Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water and bring to a boil. Reduce the heat to low, cover, and simmer for about 18 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.
  2. Prepare Ingredients: While the rice is cooking, drain and rinse the beans, prepare the corn (if frozen, thaw; if canned, drain), and slice or dice the avocado. Also, have the salsa ready for assembly.
  3. Assemble Bowl: In serving bowls, start with a base of cooked rice. Top evenly with the black beans and corn. Add slices or chunks of avocado on top, then finish with a generous spoonful of fresh salsa. Mix gently if desired and serve immediately.
