Instructions

  1. Heat Oil and Cook Onion: Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add Garlic and Jalapeño: Stir in the minced garlic and diced jalapeño and cook for another minute until fragrant.
  3. Brown Chicken: Add the boneless, skinless chicken breasts to the pot and cook until lightly browned on all sides.
  4. Add Broth and Spices: Pour in the chicken broth, and add cumin, chili powder, dried oregano, and cayenne pepper. Stir well to combine all ingredients.
  5. Simmer Chicken: Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until the chicken is cooked through and easily shreds.
  6. Shred Chicken: Remove the chicken breasts from the pot and shred them with two forks. Return the shredded chicken to the pot.
  7. Add Beans and Simmer: Stir in the drained and rinsed Great Northern and Navy beans. Simmer for another 10 minutes to allow flavors to meld.
  8. Add Cream Cheese: Reduce heat to low. Cut softened cream cheese into cubes and add to the chili, stirring until completely melted and smooth.
  9. Finish with Sour Cream: Stir in the sour cream until well incorporated. Season with salt and pepper to taste.
