Perfect for sharing, this warm skillet cookie satisfies your s’mores cravings with a rich, comforting twist.

Ingredients

Scale

Cookie Base

  • 1.5 to 2 pounds of chocolate chip cookie dough
  • Unsalted butter for greasing the skillet (about 1 tablespoon)

Filling

  • 68 full sheets of graham crackers, crushed
  • Regular-sized marshmallows (enough to cover the top layer)
  • Milk chocolate squares (such as Hershey’s bars), enough to scatter over the graham crackers

Instructions

  1. Preheat Oven and Prepare Skillet: Preheat your oven to 350°F (175°C). Generously grease the bottom and sides of a 10-inch cast iron skillet with unsalted butter to prevent sticking.
  2. Press Cookie Dough Base: Divide the cookie dough in half. Press one half evenly into the bottom of the prepared skillet, creating an even base layer.
  3. Add the Filling Layers: Scatter the crushed graham crackers evenly over the cookie dough base. Then, arrange milk chocolate squares or chips over the graham cracker layer followed by slicing regular-sized marshmallows in half and spreading them evenly on top.
  4. Top with Remaining Dough: Take the remaining half of the cookie dough and either form it into a large flat disk to invert over the filling, or break it into smaller pieces to cover the marshmallows and chocolate pieces, sealing the filling inside.
  5. Bake the Skillet Cookie: Place the skillet into the preheated oven and bake for 25 to 35 minutes. The edges should become golden brown while the center remains soft and gooey, ensuring a melty and indulgent texture.
  6. Cool and Serve: Remove the skillet from the oven and allow it to cool for at least 10 to 15 minutes before serving. This resting time helps set the layers slightly while keeping the center warm and gooey.

Notes

  • Ensure the skillet is well greased to prevent the cookie from sticking and to help with easy serving.
  • If you prefer your marshmallows extra toasted, you can place the skillet under a broiler for 1-2 minutes after baking — watch carefully to avoid burning.
  • Feel free to substitute milk chocolate with dark or white chocolate according to your taste preference.
  • Leftover cookie can be reheated gently in the microwave or oven for a warm treat later.
