Chicken and Seasoning
- 2 lbs boneless skinless chicken breast (about 3–4 chicken breasts)
- 2 cloves garlic
- A pinch of salt and pepper
Vegetables and Cheese
- 2 oz fresh baby spinach
- 14 oz can artichoke hearts (drained and chopped)
- 8.5 oz jar sun-dried tomatoes (drained with 1 tbsp oil reserved, chopped)
- 1 cup mozzarella cheese (grated)
- Preheat the oven: Set your oven to 375˚F (190˚C) to prepare for baking the chicken.
- Prepare the chicken: Lay the chicken breasts flat in the bottom of a large casserole dish. Season evenly with salt and pepper. Press minced garlic cloves over the chicken to spread the flavor evenly.
- Add toppings: Evenly distribute fresh baby spinach, chopped artichoke hearts, and chopped sun-dried tomatoes on top of the chicken breasts. Drizzle the tablespoon of reserved oil from the sun-dried tomatoes over the mixture to add richness.
- Top with cheese: Sprinkle the grated mozzarella cheese generously over the layered ingredients for a creamy topping that will melt beautifully while baking.
- Bake uncovered: Place the casserole dish in the preheated oven and bake uncovered for 20 minutes to start cooking the chicken and developing flavors.
- Cover and continue baking: Loosely cover the dish with aluminum foil and bake for another 25-30 minutes, or until the chicken reaches an internal temperature of 165˚F (74˚C) and is cooked through.
- Serve: Remove from the oven and serve the Tuscan Garlic Chicken with your choice of side dishes. Enjoy this savory, cheesy, and flavorful meal!
Notes
- Make sure not to overcook the chicken to keep it juicy and tender.
- Feel free to substitute fresh mozzarella for shredded for a creamier texture.
- You can add a splash of white wine or chicken broth for extra moisture before baking, if desired.
- Leftovers can be refrigerated for up to 3 days and reheated gently.
