Ingredients

Scale

Wet Ingredients

  • 1/2 cup mashed sweet potato
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Toppings

  • Chopped pecans, for topping
  • Cinnamon sugar, for topping

Instructions

  1. Prep Sweet Potato: Pierce a sweet potato and cook until soft by microwaving for 5-7 minutes or roasting at 400°F for 45-60 minutes. Once cooked, scoop out the flesh and mash it until smooth.
  2. Cream Butter & Sugars: In a mixing bowl, beat the softened butter with brown sugar and granulated sugar until the mixture is light and fluffy, approximately 2 minutes. Then add the egg, vanilla extract, and mashed sweet potato, mixing until fully incorporated.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cinnamon, nutmeg, ground ginger, baking soda, and salt until evenly combined.
  4. Mix Dough: Gradually add the dry ingredients to the wet mixture, stirring just until no flour streaks remain. Do not overmix to keep cookies tender.
  5. Bake: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. Use a tablespoon to scoop dough balls onto the sheets, spacing them about 2 inches apart. Optionally, sprinkle chopped pecans and cinnamon sugar on top of each cookie. Bake for 10-12 minutes, or until the edges are golden and centers still soft.
  6. Cool: Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This helps them set and retain their soft texture.

Notes

  • To prepare the sweet potato quickly, microwaving is a good shortcut, but roasting enhances flavor.
  • Do not overmix the dough to avoid tough cookies.
  • You can substitute pecans with walnuts or omit nuts if preferred.
  • Store cookies in an airtight container at room temperature for up to 3 days.
  • For extra flavor, chill the dough for 30 minutes before baking.
