Shrimp Patties

  • 1 lb wild-caught shrimp, peeled & deveined, tail removed
  • 1 tablespoon avocado oil or any oil of your choice
  • ½ cup red bell pepper, finely chopped
  • 1 clove garlic, finely chopped
  • ¼ cup red onion, finely chopped
  • ¼ cup cilantro, finely chopped
  • ¼ cup green onion, finely chopped
  • ½ small jalapeno, seeded & finely chopped
  • 1 ½ cup Panko breadcrumbs, divided
  • 1 egg
  • 3 tablespoons mayonnaise
  • 1 ½ teaspoon hot pepper sauce or to taste
  • 1 tablespoon lime juice, freshly squeezed
  • ½ teaspoon organic sugar
  • Salt & pepper, to taste

Instructions

  1. Process Shrimp: Using a food processor, pulse 1 lb shrimp until finely chopped into tiny pieces. Transfer the chopped shrimp to a mixing bowl and set aside.
  2. Sauté Vegetables: Heat 1 tablespoon of avocado oil in a skillet over medium heat. Add ½ cup chopped red bell pepper and sauté for 3 minutes. Add 1 clove finely chopped garlic and sauté for an additional 1 minute, stirring frequently. Turn off the heat and allow to cool.
  3. Preheat Air Fryer: While the bell pepper and garlic mixture cools, preheat the air fryer to 400°F (204°C).
  4. Mix Patty Ingredients: To the bowl with chopped shrimp, add ¼ cup red onion, ¼ cup cilantro, ¼ cup green onion, ½ small seeded jalapeno, ½ cup panko breadcrumbs, 1 egg, 3 tablespoons mayonnaise, 1 ½ teaspoons hot pepper sauce, 1 tablespoon fresh lime juice, ½ teaspoon organic sugar, salt, and pepper to taste. Also add the sautéed bell pepper and garlic mixture. Mix thoroughly until all ingredients are well combined.
  5. Form Patties: With clean hands, shape the mixture into 4 equal-sized shrimp patties. Coat each patty in the remaining 1 cup of panko breadcrumbs to create a crispy crust.
  6. Prepare Air Fryer Basket: Lightly grease the air fryer basket with a small amount of avocado oil to prevent sticking.
  7. Cook Patties: Place the shrimp patties in the air fryer basket without overcrowding. Cook at 400°F for 10 minutes, flipping halfway through to ensure even browning and crisping on both sides.
  8. Serve: Once cooked, serve the spicy shrimp patties warm with lime wedges and an accompaniment such as Avocado Corn Salsa. Enjoy your flavorful and healthy dish!
