Wraps

  • 4 large tortillas

Instructions

  1. Prepare the Filling: In a mixing bowl, mash the ripe avocados until smooth using a fork or potato masher. Add the canned chickpeas and coarsely mash them as well, leaving some texture. Stir in diced red onion, bell pepper, finely chopped jalapeño, lime juice, chili powder, ground cumin, smoked paprika, garlic powder, salt, and pepper. Mix thoroughly to combine all flavors.
  2. Warm the Tortillas: Heat the tortillas slightly to make them pliable. You can warm them in a dry skillet over medium heat for about 20-30 seconds per side or microwave them for 15-20 seconds wrapped in a damp paper towel.
  3. Assemble the Wraps: Evenly divide the spicy chickpea and avocado filling among the warmed tortillas. Add any optional toppings like fresh cilantro leaves or crisp lettuce if desired for added freshness and crunch.
  4. Form the Wraps: Fold in the sides of each tortilla, then roll them tightly from one end to the other to securely enclose the filling, forming neat wraps.
  5. Serve: If preferred, cut the wraps in half diagonally for easier eating and serve immediately to enjoy the fresh and creamy flavors at their best.
