Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta 1–2 minutes less than the package instructions as it will finish cooking in the oven. Drain and set aside.
  2. Cook the Shrimp: In a large skillet, heat olive oil and butter over medium-high heat. Add shrimp, season with salt, pepper, and optional red pepper flakes. Cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Make the Scampi Sauce: In the same skillet, sauté minced garlic for 30 seconds until fragrant. Pour in white wine (or chicken broth) and lemon juice, scraping the pan to deglaze. Let simmer for 2 minutes.
  4. Make It Creamy: Stir in heavy cream, chicken broth, Italian seasoning, garlic powder, and optional nutmeg. Simmer for 3–4 minutes until sauce slightly thickens.
  5. Assemble & Bake: Return cooked pasta and shrimp to the sauce, tossing to coat evenly. Transfer mixture to a greased 9×13-inch baking dish. Top with mozzarella and Parmesan cheese. Bake at 375°F (190°C) for 15 minutes, or until cheese is melted and bubbly.
