Ingredients

Scale

Shrimp Scampi

  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter, divided
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 cup dry white wine (or chicken broth)
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley, plus more for garnish
  • Salt and pepper, to taste

Garlic Bread

  • 4 thick slices of French or Italian bread
  • Garlic butter (made by mixing softened butter with minced garlic and parsley)

Instructions

  1. Prepare the Garlic Bread: Preheat your oven to 375°F (190°C). Spread the garlic butter evenly over each slice of bread and place them on a baking sheet.
  2. Bake the Bread: Bake the garlic bread in the preheated oven for 8-10 minutes or until slices are golden and toasted. Remove from the oven and set aside.
  3. Cook the Shrimp: In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Season and Sauté Shrimp: Season the shrimp with salt and pepper. Add them to the skillet in a single layer and cook for 2-3 minutes on each side until they turn pink and opaque. Remove shrimp from skillet and set aside.
  5. Make the Sauce: In the same skillet, add the remaining 1 tablespoon butter and pour in the white wine or chicken broth. Allow it to simmer for 1-2 minutes to reduce slightly.
  6. Add Flavors to Sauce: Stir in the freshly squeezed lemon juice, red pepper flakes if using, and remaining butter until the sauce is smooth and well combined.
  7. Combine Shrimp and Sauce: Return the cooked shrimp to the skillet and toss gently to coat with the sauce evenly.
  8. Garnish and Serve: Sprinkle chopped fresh parsley over the shrimp. Divide the shrimp and sauce into bowls and serve immediately with the warm garlic bread on the side. Enjoy your delicious shrimp scampi bowls!

Notes

  • For a non-alcoholic version, substitute white wine with chicken broth or vegetable broth.
  • Adjust red pepper flakes to control the spice level or omit if preferred mild.
  • Shrimp can be substituted with scallops or chicken strips if desired.
  • Make sure not to overcook shrimp to keep them tender and juicy.
  • Use day-old bread for garlic bread to achieve better crispiness when toasted.
  • Garnish with extra parsley or a squeeze of lemon for added freshness before serving.
