Roasted Garlic

  • 3 heads of garlic, whole
  • Olive oil
  • Salt and pepper to taste

Dip Mixture

  • 6 cloves of garlic, chopped
  • 1 small sweet onion, finely diced
  • 8 oz Gruyere, shredded
  • 1 cup Parmesan, shredded
  • ½ cup sour cream
  • ½ cup mayonnaise
  • Splash of hot sauce
  • Splash of white wine (optional)
  • Salt and pepper to taste

Instructions

  1. Roast the Garlic: Preheat the oven to 400°F (200°C). Cut the tops off the heads of garlic to expose the cloves. Drizzle the garlic heads with olive oil and sprinkle with salt and pepper. Wrap them tightly in tin foil and place in the oven to roast for 40-50 minutes until the cloves are soft and caramelized.
  2. Prepare the Roasted Garlic: Remove the garlic from the oven and lower the oven temperature to 375°F (190°C). Once cool enough to handle, squeeze the roasted garlic cloves out of the skins into a bowl and mash them until smooth.
  3. Mix the Dip Ingredients: To the mashed roasted garlic, add the chopped fresh garlic, finely diced sweet onion, shredded Gruyere (reserving ½ cup for topping), shredded Parmesan, sour cream, mayonnaise, a splash of hot sauce, and optional white wine. Season with salt and pepper. Stir everything together thoroughly until well combined.
  4. Bake the Dip: Transfer the mixture to a cast iron skillet or oven-safe baking dish. Sprinkle the reserved Gruyere cheese evenly over the top. Bake in the preheated 375°F oven for 20-25 minutes until the cheese topping is golden brown and bubbly.
  5. Serve: Remove from the oven and serve the dip warm with sliced bread, crackers, or fresh vegetables for dipping. This dip can be made a day ahead and refrigerated; reheat covered with foil in the oven before serving.
