Instructions

  1. Preheat the oven to 400°F (204°C) to prepare for roasting the broccoli.
  2. Prepare broccoli by ensuring all the florets are small, cutting any large pieces in half, then placing them in a large mixing bowl.
  3. Make the garlic-honey oil by warming olive oil in a small pot over medium heat. Add minced garlic and cook for about 1 minute until fragrant. Then turn off the heat and stir in red pepper flakes and honey until combined.
  4. Coat the broccoli with the garlic-honey oil mixture, tossing thoroughly so every floret is evenly coated. Season generously with salt and pepper. Spread broccoli in a single layer on a large parchment-lined baking sheet, leaving space between florets. Cover the tray tightly with foil.
  5. Steam the broccoli by baking covered for 18 minutes; the foil trap steams the broccoli, ensuring the stems cook through without drying out.
  6. Roast uncovered by removing the foil and returning the pan to the oven. Roast for an additional 10 minutes to let the broccoli crisp and caramelize.
  7. Serve immediately after roasting for the best texture and flavor.
