Instructions

  1. Prepare the Vegetables: Chop the onion, mince the garlic, and chop the red and yellow bell peppers, zucchini, and eggplant into bite-sized pieces, ensuring even cooking.
  2. Sauté Aromatics and Vegetables: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for 1 minute until fragrant. Add the chopped bell peppers and cook for 5 minutes. Then add the zucchini and eggplant and cook for an additional 5-7 minutes until the vegetables are tender.
  3. Simmer the Soup: Pour in the crushed tomatoes, tomato sauce, and vegetable broth. Stir to combine. Add the dried oregano, dried basil, dried thyme, and red pepper flakes if using. Season with salt and black pepper to taste. Bring the mixture to a gentle simmer. Reduce heat to low, cover, and let it simmer for at least 30 minutes to allow flavors to meld, stirring occasionally. You may simmer up to one hour for deeper flavor.
  4. Adjust and Serve: Taste the soup and adjust the seasoning if needed. If you prefer a smoother texture, blend a portion of the soup with an immersion blender right in the pot. Ladle the soup into bowls, garnish with fresh basil leaves, and serve hot with optional crusty bread alongside.
