Ingredients

Scale

Seeds & Nuts

  • 1/2 cup pumpkin seeds
  • 1/4 cup flaked almonds
  • 1 tbsp chia seeds

Other Ingredients

  • 1/4 cup dried coconut flakes
  • 2 tbsp maple syrup
  • sprinkle of salt

Instructions

  1. Preheat Oven: Preheat your oven to 170°C (340°F) and line a baking tray with parchment paper to prevent sticking and ensure easy removal of the clusters.
  2. Mix Ingredients: In a mixing bowl, combine the pumpkin seeds, flaked almonds, dried coconut flakes, chia seeds, and a sprinkle of salt. Drizzle the maple syrup over the mixture, then stir thoroughly to evenly coat all the ingredients with the syrup.
  3. Spread the Mixture: Spread the coated mixture onto the prepared baking tray in a thin, uniform layer about 0.5 cm thick, making sure there are no gaps, so the clusters stick together when baked.
  4. Bake: Place the tray on the bottom rack of the oven and bake for 20 minutes, watching carefully toward the end to prevent burning. The mixture should become toasted and fragrant.
  5. Cool and Break: Remove the tray from the oven and allow the mixture to cool completely without disturbing it. As it cools, it will harden and stick together. Once cooled, gently break the baked mixture into clusters of your preferred size, handling delicately to avoid crumbling.
  6. Serve or Store: Enjoy the pumpkin seed clusters immediately as a snack, or store them in a sealed container to keep them fresh for later enjoyment.

Notes

  • For a different flavor, try adding a pinch of cinnamon or nutmeg before baking.
  • Make sure to spread the mixture evenly for consistent baking and cluster formation.
  • Store in an airtight container at room temperature for up to one week or refrigerate for longer freshness.
  • Monitor closely during the last minutes of baking to avoid burning, as nuts and seeds toast quickly.
