Ingredients

Scale

Phyllo Rolls

  • 8 sheets of phyllo pastry
  • 200 g feta cheese, crumbled
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon lemon zest
  • Freshly ground black pepper to taste
  • 3 tablespoons olive oil, divided

Chili Honey

  • 1/4 cup honey
  • 1 tablespoon chili flakes
  • 1 tablespoon lemon juice

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the rolls.
  2. Prepare Feta Mixture: In a medium bowl, mix the crumbled feta cheese with chopped dill, mint, lemon zest, and a pinch of freshly ground black pepper until the herbs and zest are evenly incorporated.
  3. Layer Phyllo Sheets: On a clean dry surface, lay out one sheet of phyllo pastry and lightly brush it with olive oil. Place a second sheet on top and brush it with olive oil as well.
  4. Cut Phyllo Strips: Cut the layered phyllo sheets lengthwise into 4 equal strips to prepare for filling.
  5. Fill and Roll: Spoon about one tablespoon of the feta-herb filling onto the end of each phyllo strip. Fold the sides over the filling, then roll the pastry into a tight cylinder, sealing the filling inside.
  6. Arrange Rolls: Place the rolls seam-side down on the prepared baking sheet to prevent them from unrolling during baking.
  7. Brush with Olive Oil: Lightly brush the tops of the rolls with olive oil to promote browning and crispiness.
  8. Bake Rolls: Bake the rolls in the preheated oven for 18-20 minutes or until they are golden brown and crispy.
  9. Prepare Chili Honey: While baking, combine honey, chili flakes, and lemon juice in a small saucepan. Warm over low heat, stirring occasionally, until the mixture is slightly runny and well blended.
  10. Cool and Serve: Remove the rolls from the oven and allow them to cool slightly. Drizzle the warm chili honey over the rolls or serve it alongside for dipping.

Notes

  • Phyllo pastry is fragile; keep unused sheets covered with a damp towel to prevent drying out.
  • The chili honey can be adjusted in spiciness by modifying the amount of chili flakes.
  • Serve warm for best texture and flavor.
  • These rolls can be prepared in advance and baked just before serving.
  • Leftovers should be stored in an airtight container and consumed within 2 days for optimal freshness.
