Instructions

  1. Prepare the Cheese Sauce: In a food processor or blender, combine the 2% milk, reduced fat cream cheese, all-purpose flour, and salt. Process until the mixture is smooth and set aside.
  2. Sauté Garlic: In a medium-large saucepan, melt the unsalted butter (or olive oil) over medium-high heat. Add the minced garlic cloves and sauté for about 30 seconds until fragrant but not browned.
  3. Cook the Sauce: Pour the milk mixture into the saucepan with the garlic. Stir constantly for about 3-4 minutes as the sauce heats and begins to simmer. Continue stirring and cooking for a few more minutes until the sauce thickens to a creamy consistency.
  4. Add Parmesan and Rest: Remove the saucepan from heat and stir in the freshly grated Parmesan cheese until it melts into the sauce. Cover the pan immediately and allow the sauce to stand for at least 10 minutes. It will continue to thicken during this time to the desired consistency.
