Our no-bake monster cookies are a delicious and filling treat combining creamy peanut butter, oats, chocolate chips, and colorful M&M’s with a smooth chocolate topping.   • 8 tablespoons miniature M&M’s

  • 1 cup semi-sweet chocolate chips
  • 3 tablespoons heavy cream
  • 2 tablespoons miniature M&M’s

Instructions

  1. Prepare the pan: Line an 8-inch baking dish with foil or parchment paper to ensure easy removal and set aside.
  2. Cream sugars and butter: In a large mixing bowl, beat together the softened butter, sugar, and brown sugar until the mixture is light and fluffy, ensuring sugars are well incorporated for a smooth texture.
  3. Add peanut butter and flavorings: Mix in the creamy peanut butter thoroughly, then add the pulsed quick oats, vanilla extract, and salt, stirring until combined evenly.
  4. Incorporate whole oats and M&M’s: Gradually fold in the 1½ cups of unprocessed quick oats to add chewiness, then fold in 8 tablespoons of miniature M&M’s for bursts of color and sweetness.
  5. Press into pan: Transfer the cookie mixture to the prepared baking dish and press firmly and evenly to create a compact, level base.
  6. Melt and spread chocolate topping: In a microwave-safe bowl, gently melt the semi-sweet chocolate chips with heavy cream in 30-second intervals, stirring between each, until smooth and glossy. Spread this chocolate mixture evenly over the cookie base.
  7. Add finishing touches: Sprinkle the remaining 2 tablespoons of miniature M&M’s over the chocolate layer to decorate and add extra crunch.
  8. Chill to set: Cover the dish and refrigerate for at least 2 hours until the bars are firm and set. Once chilled, cut into 16 squares and serve.
