Base

Topping

- 3 tablespoons heavy cream
- 2 tablespoons miniature M&M’s
- Prepare the pan: Line an 8-inch baking dish with foil or parchment paper to ensure easy removal and set aside.
- Cream sugars and butter: In a large mixing bowl, beat together the softened butter, sugar, and brown sugar until the mixture is light and fluffy, ensuring sugars are well incorporated for a smooth texture.
- Add peanut butter and flavorings: Mix in the creamy peanut butter thoroughly, then add the pulsed quick oats, vanilla extract, and salt, stirring until combined evenly.
- Incorporate whole oats and M&M’s: Gradually fold in the 1½ cups of unprocessed quick oats to add chewiness, then fold in 8 tablespoons of miniature M&M’s for bursts of color and sweetness.
- Press into pan: Transfer the cookie mixture to the prepared baking dish and press firmly and evenly to create a compact, level base.
- Melt and spread chocolate topping: In a microwave-safe bowl, gently melt the semi-sweet chocolate chips with heavy cream in 30-second intervals, stirring between each, until smooth and glossy. Spread this chocolate mixture evenly over the cookie base.
- Add finishing touches: Sprinkle the remaining 2 tablespoons of miniature M&M’s over the chocolate layer to decorate and add extra crunch.
