Soup Base

  • 1 package (8 ounces) cream cheese, softened and cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream

Instructions

  1. Heat the pan: In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Cook the bacon: Add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the pot.
  3. Sauté onions: Add the diced onion to the pot and cook until soft and translucent, about 3-5 minutes.
  4. Add garlic and jalapeños: Stir in the minced garlic and diced jalapeños and cook for another 1-2 minutes until fragrant.
  5. Add chicken broth: Pour in 4 cups of chicken broth and bring the mixture to a simmer.
  6. Add chicken and seasonings: Stir in the shredded chicken, salt, black pepper, and smoked paprika.
  7. Melt cream cheese: Add the softened, cubed cream cheese to the pot and stir until melted and the soup is smooth and creamy.
  8. Add cheddar and cream: Stir in the shredded cheddar cheese and heavy cream. Heat gently until the cheese is melted and everything is well combined.
  9. Simmer soup: Let the soup simmer for 5 to 10 minutes to thicken slightly and allow flavors to meld.
