Brownie Base
- 1/2 cup unsalted butter
- 6 ounces baking dark chocolate
- 1 1/4 cup white granulated sugar
- 1 cup all-purpose flour
- 2 large eggs
Mint Frosting
- 2 1/2 cups powdered sugar (or more, to taste)
- 4 ounces cream cheese (softened to room temperature)
- 4 tablespoons unsalted butter (softened to room temperature)
- 1/2 teaspoon peppermint extract
- Gel mint green food coloring (a few drops)
Topping
- 2 ounces dark baking chocolate (melted)
- Preheat the oven. Set your oven to 350°F (175°C) to get it ready for baking the brownies.
- Prepare the pan. Line an 8-inch square baking pan with aluminum foil extending over two opposite edges to help with easy removal. Lightly grease the foil with a bit of batter or baking spray and set it aside.
- Melt butter and chocolate. In a medium saucepan over medium heat, melt 1/2 cup unsalted butter and 6 ounces of baking dark chocolate together while stirring constantly until smooth and fully combined.
- Mix the brownie batter. Remove the saucepan from heat. Stir in the granulated sugar, flour, and eggs until the batter is well mixed and smooth.
- Transfer to pan. Pour and spread the brownie batter evenly into the prepared baking pan.
- Bake brownies. Place the pan in the preheated oven and bake for 25-30 minutes, or until the brownies just begin to pull away from the sides of the pan. Once done, remove from oven and let cool completely.
- Prepare mint frosting. In a large bowl, combine the powdered sugar, softened cream cheese, softened butter, peppermint extract, and a few drops of gel mint green food coloring. Beat at medium speed until the frosting is creamy and smooth.
- Frost the brownies. Spread the prepared mint frosting evenly over the cooled brownies.
- Drizzle chocolate topping. Melt 2 ounces of dark baking chocolate and drizzle it decoratively on top of the frosted brownies.
- Chill. Place the brownies in the refrigerator for a few hours to let the frosting set and chocolate topping harden.
- Serve. Use the foil handles to lift the brownies out of the pan. Cut into bars and serve chilled for the best mint-chocolate experience.
Notes
- For a stronger peppermint flavor, increase the peppermint extract slightly, but be cautious as it can become overpowering.
- Use gel food coloring to avoid thinning the frosting consistency.
- Make sure the cream cheese and butter for the frosting are fully softened for easy mixing and smooth texture.
- Store leftover brownies in an airtight container in the refrigerator for up to 5 days.
- For an extra festive touch, sprinkle crushed peppermint candies on top of the chocolate drizzle before chilling.
