Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil, divided
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper

Vegetables

  • 1 red bell pepper, sliced
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced

Garnish and Serving

  • 1 lemon, cut into wedges
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the chicken and vegetables evenly.
  2. Prepare the Chicken Seasoning: In a small bowl, combine 2 tablespoons of olive oil with salt, black pepper, paprika, garlic powder, and dried thyme. Mix well and rub this mixture evenly over all sides of the chicken breasts to infuse them with flavor.
  3. Season the Vegetables: In a large bowl, toss the sliced carrots, red bell pepper, yellow bell pepper, zucchini, and red onion with the remaining 1 tablespoon of olive oil, along with a pinch of salt and black pepper, ensuring all pieces are coated.
  4. Arrange in Baking Dish: Place the seasoned chicken breasts in the center of a large baking dish. Arrange the seasoned vegetables evenly around the chicken to allow simultaneous roasting.
  5. Roast: Place the baking dish in the preheated oven and roast for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender and slightly caramelized.
  6. Serve: Remove from the oven, garnish the dish with freshly chopped parsley, and serve with lemon wedges on the side for squeezing over the chicken and vegetables to add a fresh citrus brightness.

Notes

  • You can substitute any of the vegetables with your favorites, such as asparagus or cherry tomatoes, depending on the season.
  • For more flavor, marinate the chicken in the seasoning mixture for 30 minutes to an hour before cooking.
  • Make sure not to overcook the chicken to retain its juiciness; use a meat thermometer for best results.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • This recipe pairs well with rice, quinoa, or a fresh green salad for a complete meal.
