Pancake Batter
- 1 cup (120g) Bisquick or pancake mix
- 1 scoop (31g) vanilla PEScience Select protein powder
- 3/4 cup (180g) skim milk or your preferred milk
- 1 tsp maple extract (optional)
Eggs
- 4 large eggs, whisked
- Cooking spray, as needed
- Prepare the Pancake Batter: In a medium bowl, mix together the pancake mix and protein powder thoroughly. Gradually add the milk and maple extract, stirring until all dry ingredients are fully combined and the batter is smooth.
- Cook the Pancakes: Heat a large skillet or griddle over medium heat and grease lightly with cooking spray. Using a tablespoon, pour 2 tablespoons of batter at a time into the pan, forming 8 small circular pancakes. Cook until the bottoms are golden brown, then flip and cook the other side for 60-90 seconds until cooked through. You may need to cook in two batches to avoid overcrowding.
- Cook the Eggs: Whisk each egg individually in a small bowl. Heat a non-stick pan over medium-low heat with cooking spray. Pour in one egg and quickly swirl the pan to spread the egg evenly. After about 10-15 seconds, once edges are set, use a rubber spatula to fold the egg like a letter: fold one half towards the center, then the other half over it to form a rectangle. Fold one end of the rectangle into the center, then the other end over it, creating a compact square egg. Repeat this process for all four eggs. To save time, you can cook two eggs at once and slice them in half.
- Assemble the McGriddles: Place one egg square between two pancakes and enjoy immediately for a warm, flavorful, and healthy breakfast sandwich.
Notes
- You can substitute the protein powder with your favorite flavor or omit it if preferred.
- Maple extract adds authentic mcgriddle flavor but is optional.
- Use non-stick cooking spray or a light brush of butter to prevent sticking when cooking pancakes and eggs.
- For a dairy-free option, use almond, oat, or other plant-based milks.
- Leftover pancakes can be stored in the fridge and reheated in a toaster or microwave.
