  • 1 tablespoon olive oil
  • 1 1/2 pounds ground beef
  • 1 cup onion, chopped (one medium onion)
  • 1 tablespoon minced garlic (3 cloves)
  • 2 cups carrots, peeled and chopped
  • 2 cups potatoes, peeled and cut into small cubes
  • 1 tablespoon coconut aminos (or soy sauce)
  • 1 teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 (28 oz) can petite diced tomatoes
  • 1 cup beef broth

Thickening and Finishing

  • 1 ½ tablespoon cornstarch (omit if paleo/Whole30)
  • ¼ cup water
  • ¾ cup frozen peas, defrosted

Instructions

  1. Instant Pot Preparation: Select the Sauté function on your Instant Pot and heat the olive oil. Add ground beef, chopped onion, and minced garlic. Cook for about 10 minutes until the beef browns and the onion softens, remembering to scrape the bottom to prevent burning.
  2. Add Remaining Ingredients: Turn off Sauté mode, add carrots, potatoes, coconut aminos, dried oregano, parsley, black pepper, Worcestershire sauce, diced tomatoes, and beef broth. Stir well, close the lid, and set the valve to Sealing.
  3. Pressure Cook: Set to High Pressure for 8 minutes. It will take approximately 20 minutes to reach pressure before cooking begins. To expedite, warm the beef broth before adding.
  4. Quick Release: Once the cooking time ends, carefully perform a quick pressure release by turning the valve to venting.
  5. Thicken the Stew: Turn on Sauté mode again and bring the stew to a boil. Mix cornstarch with water in a small bowl and stir this slurry into the boiling stew. Allow it to thicken, then turn off Sauté mode.
  6. Finish with Peas: Stir in the defrosted peas until evenly combined, then serve hot.
  7. Stovetop Method: In a large pot over medium-high heat, heat olive oil, then brown ground beef with onion and garlic for 10 minutes. Add all ingredients except cornstarch, water, and peas, stir, and bring to a boil. Reduce heat and simmer for 30 minutes. Mix cornstarch and water, add to stew, bring to a boil again, then simmer for another 5 to 8 minutes. Add peas and stir before serving.
  8. Crockpot Method: Brown ground beef, onion, and garlic in olive oil over medium-high heat for 10 minutes. Transfer mixture to crockpot along with remaining ingredients except cornstarch, water, and peas. Cook on low for 6-8 hours or high for 4-6 hours. Optional: in the last hour, mix cornstarch with water and add to the stew, turning crockpot to high. Before serving, stir in peas.

Notes

  • Omit cornstarch for paleo or Whole30 compliance.
  • Microwaving the beef broth before adding to the Instant Pot can reduce overall cooking time.
  • Scraping browned bits from the bottom during sautéing prevents burn notices in Instant Pot.
  • You can substitute coconut aminos with soy sauce if preferred.
  • For a thicker stew, adjust cornstarch accordingly, but avoid adding too much to prevent a gluey texture.
  • Frozen peas add a pop of color and sweetness—do not skip them for best flavor.
