Ingredients

Scale

Green Bean Mixture

  • 4 cups cooked cut green beans (cut into 1-inch pieces)
  • 1 can (10.5 ounces) Campbell’s® Condensed Cream of Mushroom Soup or 98% Fat Free Cream of Mushroom Soup
  • 1/2 cup milk
  • 1 cup shredded white Cheddar cheese
  • 2/3 cup French’s® French Fried Onions

Topping

  • 1/2 cup shredded white Cheddar cheese
  • 2/3 cup French’s® French Fried Onions

Puff Pastry

  • 1 package (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed

Instructions

  1. Preheat and Mix Ingredients. Heat the oven to 400°F. In a large bowl, combine the cooked green beans, cream of mushroom soup, milk, 1 cup of shredded white Cheddar cheese, and 2/3 cup French fried onions. Stir well until all ingredients are evenly mixed.
  2. Prepare Puff Pastry Cups. Lightly grease two 24-cup mini muffin pans. Unfold one puff pastry sheet onto a lightly floured surface and roll it into a 10×12-inch rectangle. Cut the pastry lengthwise into six 2-inch strips, then crosswise into four 2 1/2-inch strips, creating 24 rectangles. Press each rectangle into the muffin cups. Repeat with the remaining pastry sheet to make 48 pastry cups in total.
  3. Fill and Bake First Phase. Spoon about 1 tablespoon of the green bean mixture into each pastry cup. Place the muffin pans in the oven and bake for 15 minutes until the filling is set.
  4. Prepare and Add Topping. While the bites bake, combine the remaining 1/2 cup shredded Cheddar cheese and 2/3 cup French fried onions in a small bowl. Remove the muffin pans from the oven and top each green bean bite with approximately 1 teaspoon of this topping mixture.
  5. Bake Again and Cool. Return the muffin pans to the oven and bake for an additional 5 minutes, or until the tops are golden brown and the cheese is melted. Let the casserole bites stand for 5 minutes before carefully removing them from the muffin pans for serving.

Notes

  • If using mini muffin pans with fewer cups, bake the bites in multiple batches to accommodate all the pastry cups.
  • The recipe uses two sets of toppings: one baked inside and one added partway through baking for a crispy finish.
  • Ensure puff pastry is fully thawed before cutting and shaping to prevent tearing.
  • These bites can be served warm or at room temperature, making them perfect for parties.
  • For a lighter option, use the 98% Fat Free Cream of Mushroom Soup.
