Ingredients

Scale

Pizza Base

  • 1 pre-made pizza crust (store-bought or homemade)

Vegetables & Aromatics

  • 1 cup fresh spinach, chopped
  • 1 medium head of garlic
  • Fresh basil leaves for garnish

Cheeses

  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded (divided)
  • ½ cup feta cheese, crumbled
  • ¼ cup grated Parmesan cheese

Seasonings & Oils

  • 2 tablespoons olive oil (divided)
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the head of garlic, drizzle it with 1 tablespoon of olive oil, wrap it tightly in aluminum foil, and roast in the oven for 30-35 minutes until the cloves are soft and caramelized. Allow it to cool slightly, then squeeze the roasted garlic cloves out of their skins into a bowl.
  2. Prepare the Spinach: In a skillet over medium heat, heat the remaining 1 tablespoon of olive oil. Add the chopped spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper to taste, then remove from heat and set aside.
  3. Make the White Sauce: Mash the roasted garlic in the bowl with a fork until smooth. Add the ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Mix everything thoroughly until well combined to create a creamy white garlic sauce.
  4. Assemble the Pizza: Spread the garlic-ricotta mixture evenly over the pizza crust. Distribute the sautéed spinach on top of the sauce, then sprinkle with the remaining mozzarella cheese and crumbled feta cheese. If desired, sprinkle with crushed red pepper flakes for added heat.
  5. Bake the Pizza: Place the assembled pizza onto the oven rack or a baking sheet and bake in the preheated oven at 400°F (200°C) for 15-20 minutes, or until the crust is golden brown and the cheeses are bubbly and slightly browned.
  6. Finishing Touches: Remove the pizza from the oven and allow it to cool for a couple of minutes. Garnish with fresh basil leaves before slicing and serving to add a fragrant and fresh flavor.

Notes

  • You can use a homemade pizza crust or a store-bought one depending on your preference and time.
  • For a spicier flavor, add crushed red pepper flakes as per taste or omit if you prefer a mild pizza.
  • Make sure to roast the garlic until very soft for the best flavor and smoothness in the white sauce.
  • Sautéing the spinach removes excess moisture and prevents the pizza from becoming soggy.
  • Feel free to add extra Parmesan on top before baking for a more pronounced cheesy crust.
  • This pizza is vegetarian but not vegan due to the cheeses; you can substitute vegan cheese if desired.
