This Garlic Parmesan Chicken Meatloaf is a deliciously savory and moist twist on traditional meatloaf, featuring ground chicken blended with Parmesan cheese, garlic, and Italian seasoning. With an optional cheesy mozzarella center and a flavorful garlic Parmesan butter topping, it’s a comforting and flavorful main dish perfect for any dinner.

Ingredients

Scale

Meatloaf Mixture

  • 1 ½ pounds ground chicken
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • ½ cup breadcrumbs (plain or Italian-seasoned)
  • 1 large egg, lightly beaten
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded mozzarella cheese (optional, for a cheesy center)
  • 2 tablespoons chopped parsley (for garnish)

Topping

  • ¼ cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • 1 teaspoon minced garlic

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper to prevent sticking and make removal easier.
  2. Mix Ingredients: In a large mixing bowl, combine the ground chicken, Parmesan cheese, minced garlic, breadcrumbs, beaten egg, Italian seasoning, salt, and black pepper. Mix gently until just combined to avoid a dense texture.
  3. Shape the Meatloaf: Transfer half of the chicken mixture into the prepared loaf pan and press it evenly into the bottom. If you are using mozzarella cheese, layer it over this half, leaving a small border around the edges. Then top with the remaining chicken mixture, pressing gently to seal and shape the meatloaf evenly.
  4. Prepare the Topping: In a small bowl, combine grated Parmesan, melted butter, and minced garlic. Spread this flavorful mixture evenly over the top of the formed meatloaf for a rich, savory crust.
  5. Bake: Place the meatloaf in the preheated oven and bake for 40 to 45 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.
  6. Rest and Serve: Remove the meatloaf from the oven and let it rest for 5 to 10 minutes. This allows the juices to redistribute, making it easier to slice. Garnish with chopped parsley before serving for a fresh, vibrant touch.

Notes

  • Do not overmix the meat mixture to keep the meatloaf tender and moist.
  • The mozzarella cheese center is optional but adds a delicious gooey surprise.
  • Breadcrumbs can be substituted with gluten-free breadcrumbs for a gluten-free version.
  • Use a meat thermometer to ensure the meatloaf is cooked safely to 165°F (74°C).
  • Leftover meatloaf can be refrigerated for up to 3 days or frozen for up to 3 months.
