Fresh Raspberry Coulis Recipe

4.5 from 68 reviews

A simple and vibrant raspberry coulis made by simmering fresh raspberries with sugar and lemon juice, then blending and straining the mixture to create a smooth, tangy sauce perfect for desserts and breakfast dishes.

Ingredients

Scale

Ingredients:

  • 2 cups fresh or frozen raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon fresh lemon juice

Instructions

  1. Simmer Berries: In a medium saucepan, combine raspberries, sugar, and lemon juice. Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar dissolves and the berries break down, about 5 to 7 minutes.
  2. Blend and Strain: Remove the saucepan from heat. Using an immersion blender or transferring to a regular blender, purée the mixture until smooth. Then, pour the purée through a fine mesh sieve to strain out seeds and pulp, pressing gently to extract as much liquid as possible. Discard the solids.

Notes

  • Use fresh or frozen raspberries; no need to thaw frozen before cooking.
  • Adjust sugar amount to taste depending on raspberry sweetness.
  • Store leftover coulis in an airtight container in the refrigerator for up to one week.
  • This coulis pairs well with cheesecake, panna cotta, pancakes, or yogurt.
