Ingredients

Scale

Meat and Seasonings

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 tablespoon tomato paste
  • 2 teaspoons chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon dried oregano

Base Ingredients

  • 10 ounces tortilla chips, divided
  • 4 cups Mexican-blend shredded cheese, divided
  • 1 cup cooked black beans, divided
  • 1 cup cooked yellow corn, divided

Fresh Toppings

  • Diced Roma tomatoes
  • Pickled jalapeños
  • Sour cream or Mexican crema
  • Diced red onions
  • Chopped cilantro

Instructions

  1. Prep the Oven and Pan: Preheat your oven to 400°F and line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Cook the Meat: Heat olive oil in a large skillet over medium-high heat. Add ground beef and stir in tomato paste, chili powder, cumin, salt, garlic powder, onion powder, paprika, and oregano. Break the meat into smaller pieces and cook for 6-8 minutes until browned and evenly seasoned.
  3. Assemble the Base Layer: Spread half of the tortilla chips evenly on the prepared baking sheet. Layer half of the cooked beef, shredded cheese, black beans, and corn on top of the chips for even distribution of flavors.
  4. Add the Top Layer: Place the remaining tortilla chips over the first layer, then add the rest of the beef, cheese, beans, and corn to stack and ensure every bite is flavorful.
  5. Bake: Bake in the preheated oven for 4-6 minutes until the cheese melts. Keep a close watch to avoid overcooking.
  6. Add Fresh Toppings: Remove from the oven and immediately top with diced Roma tomatoes, pickled jalapeños, sour cream, diced red onions, and chopped cilantro. Serve warm to enjoy the combination of melty cheese and fresh, zesty toppings.

Notes

  • To make this dish vegetarian, substitute ground beef with plant-based protein and follow the same seasoning instructions.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a 350°F oven; chips may lose some crispness.
  • Customize toppings by adding guacamole, diced avocado, or olives according to your preference.
  • Smoked paprika in place of regular paprika can add a smoky flavor dimension.
  • Use frozen corn if fresh is not available, thaw before use.
