Easy Pepper Steak is a quick and flavorful stir-fry dish featuring tender beef strips cooked with colorful bell peppers and onions in a savory soy-garlic sauce thickened with cornstarch. Perfect for a weeknight dinner, it delivers a satisfying mix of textures and rich tastes in under 30 minutes.

Ingredients

Scale

Meat

  • 1 lb beef strips (sirloin or flank steak)

Vegetables

  • 1 large green bell pepper, sliced
  • 1 large red bell pepper, sliced
  • 1 medium onion, sliced

Sauce

  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 tablespoon vegetable oil (for cooking)

Instructions

  1. Brown the Beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the beef strips and cook until browned on all sides, about 4-5 minutes. Remove beef from the skillet and set aside.
  2. Sauté Vegetables: In the same skillet, add sliced bell peppers and onions. Cook for about 3-4 minutes until they begin to soften but still retain some crunch.
  3. Prepare the Sauce: In a small bowl, mix soy sauce, minced garlic, cornstarch, and water until the cornstarch is fully dissolved to form a smooth sauce.
  4. Combine and Thicken: Return the browned beef to the skillet with the vegetables. Pour the sauce mixture over and stir well. Cook for an additional 2-3 minutes, stirring frequently, until the sauce thickens and coats the beef and vegetables evenly.
  5. Serve Hot: Remove from heat and serve the pepper steak hot, ideally over steamed rice or noodles for a complete meal.

Notes

  • For extra flavor, marinate the beef in soy sauce and garlic for 15 minutes before cooking.
  • Adjust the amount of garlic and soy sauce to suit taste preferences.
  • You can substitute beef with chicken or tofu for variation.
  • Use a non-stick skillet or wok to prevent sticking and ensure even cooking.
  • Serve immediately for the best texture; leftovers may soften the vegetables.
