  • 2024 Ladyfinger cookies (See Notes)
  • 1 cup Water
  • 1/2 cup Granulated sugar
  • 23 tbsp Lemon juice
  • 23 pcs Lemon peels

For the Filling

  • 3/4 cup Cream (30-35% fat)
  • 1 lb Mascarpone cheese
  • 3/4 cup Icing sugar
  • 3/4 cup Lemon curd (Homemade or store-bought)
  • 2 tbsp Lemon curd (for topping)
  • Lemon slices (for garnish)

Instructions

  1. Prepare Serving Dish: Keep a non-metallic serving dish ready. You can use any shape – round, square, or rectangular. The recipe suggests a 6″x 9″ casserole dish.
  2. Make Lemon Syrup: In a small saucepan, combine water, granulated sugar, and lemon peels. Bring to a simmer over medium heat and cook for 5 minutes.
  3. Cool and Add Lemon Juice: Let the syrup cool completely, then whisk in the lemon juice. Remove the lemon peels and transfer the syrup to a bowl. Set aside.
  4. Whip Cream: In a chilled bowl, whip the cream for 4-5 minutes until soft to medium peaks form.
  5. Prepare Mascarpone Mixture: In a large bowl, whisk together mascarpone cheese and icing sugar until smooth.
  6. Fold in Cream and Lemon Curd: Gently fold the whipped cream and lemon curd into the mascarpone mixture, being careful not to overmix to maintain a light texture.
  7. Assemble Tiramisu: Dip ladyfingers one at a time into the lemon syrup, then arrange a single layer of soaked ladyfingers in the serving dish.
  8. Layer Filling: Spread half of the mascarpone-lemon curd mixture evenly over the ladyfingers.
  9. Add Second Ladyfinger Layer: Dip remaining ladyfingers in lemon syrup and place another single layer on top of the filling.
  10. Top with Remaining Filling: Spread the rest of the filling over the second ladyfinger layer.
  11. Optional Decoration: Drop small spoonfuls of lemon curd on top of the filling and swirl with a spoon for decorative effect.
  12. Chill: Refrigerate the assembled tiramisu for at least 8 hours or overnight to allow flavors to meld and the dessert to set.
  13. Garnish and Serve: Decorate with fresh lemon slices before serving. Enjoy your refreshing lemon tiramisu!

Notes

  • Use ladyfingers that are fresh and not overly dry to absorb the lemon syrup properly.
  • For best flavor, use homemade lemon curd or a high-quality store-bought version.
  • The dessert requires refrigeration to set properly and develop flavors, so plan ahead.
  • You can adjust the lemon juice and curd quantities based on your preferred tartness.
  • This recipe is eggless, making it suitable for those avoiding raw eggs.
