Ingredients

Scale

Main Ingredients

  • 1 pound lean ground beef
  • 4 medium russet potatoes, diced
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Brown the Ground Beef: In a skillet over medium heat, cook the lean ground beef until it’s browned and cooked through, then drain off any excess fat to keep the soup light.
  2. Add Ingredients to Crockpot: Transfer the browned ground beef to your crockpot. Add the diced potatoes, chopped onion, diced carrots, minced garlic, and season with salt and pepper.
  3. Pour in Chicken Broth: Pour enough low-sodium chicken broth into the crockpot to cover all the ingredients, ensuring an even cook and flavorful broth.
  4. Cook the Soup: Set the crockpot to low and cook for 6 hours, or set it on high and cook for 3 to 4 hours, until the vegetables are tender and flavors meld together.
  5. Finish with Heavy Cream: Stir in the heavy cream into the soup and let it cook for an additional 10 minutes on low to heat through, creating a rich and creamy texture. Serve warm.

Notes

  • You can substitute half-and-half for heavy cream if you want a lighter version, though the soup will be less rich.
  • For a thicker soup, mash some of the potatoes before serving or add a tablespoon of flour or cornstarch mixed with water during the last cooking stage.
  • Adding herbs like thyme or parsley can enhance flavor.
  • Leftovers keep well in the fridge for up to 3 days and reheat nicely on the stove or microwave.
  • Use low-sodium broth to control salt levels, especially if watching sodium intake.
