These Easy Chicken Sliders are a perfect crowd-pleaser featuring shredded rotisserie chicken, melted mozzarella, and a buttery dijon mustard glaze atop sweet Hawaiian rolls. Baked to golden perfection, they are simple to assemble and ideal for quick meals or gatherings.

Slider Assembly

  • 1 sheet sandwich rolls (I like to use Hawaiian sweet rolls, sliced in half)
  • 3 cups shredded rotisserie chicken (or leftover shredded turkey)
  • 1 cup shredded mozzarella cheese (or cheese of your choice)
  • 1/4 red onion, sliced thin

Spice Mix

  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper (optional for spice)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Butter Mixture

  • 1/3 cup butter (or more as desired)
  • 2 tablespoons dijon mustard

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the sliders.
  2. Prepare Baking Dish: Grease and line a 9” x 13” casserole dish to prevent sticking and make cleanup easier.
  3. Assemble Bottom Layer: Cut the sandwich roll sheet in half horizontally and place the bottom half of the rolls flat inside the casserole dish.
  4. Add Fillings: Evenly layer the shredded rotisserie chicken, shredded mozzarella cheese, and thinly sliced red onions on top of the bottom buns.
  5. Mix Spices & Cover: In a small bowl, combine paprika, garlic powder, onion powder, crushed red pepper, salt, and black pepper. Sprinkle the mixture evenly, then cover the sandwich fillings with the top half of the sandwich roll sheet.
  6. Prepare Butter Glaze: In a small saucepan, melt the butter and dijon mustard over medium-high heat while whisking to emulsify them into a smooth glaze.
  7. Brush and Season: Pour the butter-mustard glaze over the assembled sliders, using a pastry brush to coat evenly. Sprinkle the prepared spice mixture over the tops of the buns for extra flavor.
  8. Bake Covered: Cover the casserole dish with aluminum foil and bake for 15-20 minutes, allowing the butter to soak into the sliders.
  9. Bake Uncovered: Remove the foil and bake for an additional 3-5 minutes until the tops of the buns are lightly browned. Watch closely to avoid burning.
  10. Serve: Once done, slice the assembled sliders into individual portions and serve immediately while warm and melty.

Notes

  • Use Hawaiian sweet rolls for the best flavor contrast, but any sandwich rolls will work.
  • The crushed red pepper is optional; omit if you prefer a milder slider.
  • Leftover shredded turkey can substitute for chicken if desired.
  • Adjust the butter quantity if you want a richer or lighter glaze.
  • Keep an eye on the slider tops during the last baking stage to prevent burning.
