Dressing
- 1/2 cup mayonnaise
- 1 tablespoon dry ranch powder dressing mix
- 1 tablespoon Adobo Sauce from a small can of Chipotle Peppers in Adobo Sauce (Goya brand recommended)
- 1/4 cup milk (any kind, whole milk preferred)
Ground Beef Mixture
- 1 lb ground beef (85/15)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
Bowl Assembly
- 1 large head of Romaine hearts or 2 smaller ones (about 4 cups), washed, dried, and chopped
- 4 ounces shredded cheddar cheese (about 1 cup grated)
- 1 small red onion, sliced thinly
- 1/2 cup dill pickle chips or 4 dill pickle spears, cut into bite-sized pieces
- 1–2 roma tomatoes, seeds removed and diced
- 1 avocado, pit removed, peeled, and diced
- Make the Chipotle Ranch Dressing: In a large bowl, whisk together the mayonnaise and dry ranch dressing powder until fully combined. Pour in the milk and adobo sauce from the chipotle peppers, then whisk thoroughly until the dressing is smooth. Refrigerate the dressing until ready to use to allow flavors to meld.
- Cook the Ground Beef: Heat a large pot or Dutch oven over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until no longer pink. Sprinkle in the chili powder, cumin, salt, and garlic powder and stir well to evenly season the meat. Once fully cooked, turn off the heat and cover to keep warm.
- Prepare the Lettuce and Toppings: While the beef is cooking, wash and dry the Romaine hearts, then chop into bite-sized pieces. Slice the red onion thinly, dice the tomatoes after removing their seeds, cut the dill pickles into bite-sized pieces, and peel and dice the avocado.
- Assemble the Cheeseburger Bowls: On a large plate or bowl, create a bed of chopped Romaine lettuce covering about half of the surface. Spoon the seasoned ground beef onto the other half. Arrange the shredded cheddar cheese, sliced red onion, diced avocado, pickles, and diced tomatoes around the beef and lettuce in an appealing way.
- Add the Dressing and Serve: Drizzle the chilled chipotle ranch dressing generously over the assembled bowl or serve it on the side for dipping. Enjoy immediately for a fresh and flavorful meal.
