Garlic Sauce

  • ¾ cup (172.5 g) sour cream
  • ¼ cup (58 g) mayonnaise
  • 2 tablespoons whole milk
  • 1 teaspoon lemon juice
  • 1 teaspoon minced garlic
  • ½ teaspoon dill weed
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Topping

  • 2530 dill pickle slices
  • 2 cups (226 g) shredded mozzarella cheese
  • Fresh dill (roughly chopped, for garnish)

Instructions

  1. Activate yeast: In a large bowl, combine warm water, active dry yeast, and sugar. Stir gently and let rest for 5 minutes until foamy and activated.
  2. Prepare oil mixture: In a small bowl, mix extra virgin olive oil, Italian seasoning, minced garlic, and kosher salt. Reserve half of this mixture for brushing the skillet later.
  3. Combine dough: Pour half of the oil mixture into the yeast mixture. Gradually add flour and stir until combined into a soft dough.
  4. Let dough rise: Transfer the dough to a greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Make garlic sauce: While the dough rises, in a medium bowl mix together sour cream, mayonnaise, whole milk, lemon juice, minced garlic, dill weed, kosher salt, and ground black pepper. Stir well until smooth and set aside.
  6. Preheat oven and prepare skillet: When dough has risen, preheat oven to 450°F. Pour reserved oil mixture into a 12-inch cast-iron skillet and use a pastry brush to coat the bottom and sides evenly.
  7. Shape dough in skillet: Transfer risen dough into the oiled skillet. Press gently with fingers spreading dough to edges. Create dimples all over the dough surface using your fingertips.
  8. Spread garlic sauce and add toppings: Evenly spread the prepared garlic sauce over the dough. Arrange dill pickle slices on top, then sprinkle shredded mozzarella cheese over everything.
  9. Bake: Place the skillet in the oven and bake for 22-25 minutes until the crust is golden brown and cheese is bubbly and lightly browned.
  10. Garnish and serve: Remove from oven, sprinkle freshly chopped dill on top, slice, and serve warm.
