Instructions

  1. Prepare Ingredients: Cube the chicken breast into bite-sized pieces and chop the green and red bell peppers along with the onion into similar-sized chunks for even cooking.
  2. Combine in Crockpot: Place the cubed chicken, chopped bell peppers, chopped onion, and pineapple chunks directly into the crockpot, layering evenly.
  3. Make Sauce: In a separate bowl, whisk together the vinegar, brown sugar, soy sauce, and ketchup until the sugar dissolves and the mixture is well combined.
  4. Add Sauce: Pour the sweet and sour sauce over the chicken and vegetables in the crockpot, making sure the ingredients are coated well.
  5. Cook: Cover the crockpot with its lid and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the chicken is tender and fully cooked.
  6. Thicken Sauce (Optional): If you prefer a thicker sauce, dissolve 2 tablespoons of cornstarch in 2 tablespoons of water and stir it into the crockpot during the last 30 minutes of cooking. Continue cooking until the sauce thickens.
