Ingredients

Scale

Main Ingredients

  • 3 pound chuck roast (2.53.5 pound will work)
  • 2 tablespoons onion soup mix (1 envelope)
  • 3 garlic cloves (minced or pressed)
  • 1/4 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 10.5 ounces condensed French onion soup (1 can)
  • 4 tablespoons butter (divided)

For Serving

  • 8 small (4 inch) hoagie rolls or 4 large (68 inch) rolls
  • 4 ounces provolone cheese (sliced, optional)

Instructions

  1. Prepare the Chuck Roast: Place the chuck roast in the bottom of the slow cooker. Season all sides evenly with the onion soup mix, minced garlic, and dried thyme to infuse the meat with robust flavors.
  2. Add Liquids and Butter: Pour the Worcestershire sauce and condensed French onion soup over the top of the chuck roast. Cut 1 tablespoon of butter into two pats and place them on top of the roast. Secure the lid on the slow cooker.
  3. Slow Cook the Roast: Cook the roast for 6-8 hours on high heat, or alternatively for 8-10 hours on low heat, allowing the meat to become tender and flavorful.
  4. Shred the Meat: Once cooking is complete, carefully remove the roast from the slow cooker and shred the beef using forks, discarding any excess fat or connective tissue.
  5. Prepare the Au Jus: Drain the fat from the cooking juices left in the slow cooker. Transfer the au jus to a bowl or individual serving bowls to be used as a dipping sauce.
  6. Toast the Rolls: Melt the remaining 3 tablespoons of butter. Slice each hoagie roll in half and brush the cut sides with the melted butter. Place the rolls on a baking sheet cut side up and broil in the oven for 2-4 minutes or until the edges are lightly toasted.
  7. Assemble the Sandwiches: Fill each toasted roll with the shredded beef, add a slice of provolone cheese if desired, and serve alongside the warm au jus dipping sauce for an authentic French dip experience.

Notes

  • You can use different cuts of beef such as brisket if preferred, but chuck roast remains the most tender and flavorful option.
  • Broiling time for the rolls may vary depending on your oven; watch carefully to prevent burning.
  • For a richer au jus, you can simmer the cooking liquids on the stovetop to reduce and concentrate the flavor before serving.
  • Optional cheese can be omitted for a simpler, dairy-free meal.
  • Leftover shredded beef can be stored for up to 3 days in the refrigerator or frozen for up to 3 months.
