Ingredients

Scale

Main Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Dairy

  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Optional

  • 1/2 cup cooked pasta
  • Fresh parsley (for garnish)

Instructions

  1. Combine Ingredients: Place chicken breasts, chicken broth, diced tomatoes, Italian seasoning, garlic powder, onion powder, salt, and pepper into the Crock Pot. Stir gently to combine ingredients evenly.
  2. Slow Cook: Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked through.
  3. Shred Chicken: Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
  4. Add Cream and Cheese: Stir in the heavy cream, grated Parmesan cheese, and shredded mozzarella cheese. Continue cooking on low for another 20-30 minutes until the soup becomes creamy and the cheese is melted thoroughly.
  5. Optional Pasta Addition: If desired, stir in cooked pasta to add extra heartiness just before serving.
  6. Garnish and Serve: Ladle soup into bowls, garnish with fresh parsley and extra Parmesan cheese if desired, and serve warm.

Notes

  • The soup can be stored in the refrigerator for up to 3 days in an airtight container.
  • For a thicker soup, reduce the amount of chicken broth or add more cheese.
  • Gluten-Free pasta can be used for those sensitive to gluten.
  • To make it dairy-free, substitute heavy cream and cheese with plant-based alternatives.
  • Add fresh basil or crushed red pepper flakes for additional flavor variations.
