A rich and creamy homemade ice cream recipe featuring tangy goat cheese and sweet honey, enhanced with luscious berry jam, zesty lemon curd, toasted almonds, and fresh rosemary. Made effortlessly with the Ninja Creami, this dessert delivers a unique blend of flavors and textures for an irresistible treat.

Ingredients

Scale

Ice Cream Base

  • 2 cups Heavy Cream (for a lighter option, substitute with half-and-half)
  • 1 cup Milk (almond or coconut milk can be used for a dairy-free alternative)
  • 0.5 cups Honey (maple syrup is a great substitution for richer sweetness)
  • 4 ounces Fresh Goat Cheese (recommended for best results)

Mix-Ins

  • 0.5 cups Raspberry or Blackberry Jam (any berry jam can be used for varied tastes)
  • 0.5 cups Lemon Curd (homemade or store-bought)
  • 0.5 cups Toasted Almonds (can be substituted with pecans or walnuts)
  • 1 tablespoon Fresh Rosemary (for maximum flavor impact)

Instructions

  1. Prepare the ice cream base: In a medium saucepan, combine the heavy cream, milk, and honey. Heat gently over low to medium heat while stirring occasionally until the honey has fully dissolved. Remove from heat and whisk in the goat cheese until the mixture is smooth and creamy.
  2. Freeze the mixture: Pour the ice cream base into a Ninja Creami pint container, smoothing the top with a spatula for an even surface. Place the container in the freezer and freeze for at least 24 hours, or until the mixture is completely solid.
  3. Soften before processing: Remove the frozen pint from the freezer and let it sit at room temperature for 5 to 10 minutes to allow slight softening, which will aid in processing.
  4. Process the ice cream: Insert the pint into the Ninja Creami machine and select the ‘Ice Cream’ setting to churn the base into creamy ice cream.
  5. Add mix-ins: Create a small well in the center of the processed ice cream. Spoon in the raspberry or blackberry jam, lemon curd, toasted almonds, and chopped fresh rosemary evenly into the well.
  6. Re-spin to combine: Process the mixture again using the ‘Re-spin’ setting on the Ninja Creami to thoroughly combine the mix-ins with the ice cream base.
  7. Serve or refreeze: Enjoy the ice cream immediately for a soft-serve texture, or place it back in the freezer for 1 to 2 hours to achieve a firmer, scoopable consistency.

Notes

  • For a lighter ice cream, replace heavy cream with half-and-half.
  • Dairy-free alternatives for milk include almond or coconut milk, but note this may alter texture slightly.
  • Maple syrup can be used instead of honey for a deeper sweetness.
  • Toasted almonds can be swapped with other nuts like pecans or walnuts depending on preference.
  • Fresh rosemary provides a better aroma and flavor than dried rosemary.
  • Ensure the ice cream base is fully frozen before processing to achieve the best creamy texture.
  • If you don’t have a Ninja Creami, other ice cream makers or manual methods may be used, but texture and processing will differ.
