Ingredients

Scale

Sauce and Filling

  • 2 tablespoons unsalted butter
  • 1 shallot, minced
  • 2 teaspoons minced garlic
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon kosher salt
  • ½ teaspoon ground pepper
  • 12 ounces diced ham (about 2 cups)
  • 3 tablespoons all-purpose flour
  • 1 cup heavy cream
  • ⅓ cup chicken stock
  • 1½ cups shredded gruyere cheese, divided

Other Ingredients

  • 1 package gnocchi (16 to 17.6 oz), prepared according to package directions
  • ½ cup frozen green peas
  • ½ cup shredded parmesan cheese

Instructions

  1. Sauté Aromatics and Ham: Heat a large skillet over medium heat and add the butter. Once melted, add the minced shallot, garlic, rosemary, kosher salt, and ground pepper. Sauté until the shallots are softened and translucent, about 10 minutes. Add the diced ham and sauté until warmed through, about 3 more minutes. Sprinkle the flour evenly over the mixture and cook for about 3 minutes, stirring constantly until the flour is fully absorbed and no longer has a raw smell.
  2. Make the Cream Sauce: Pour in the heavy cream and chicken stock. Bring the mixture to a gentle simmer, stirring frequently to prevent sticking, and allow to cook for 5 minutes until slightly thickened. Add 1 cup of shredded gruyere cheese and stir until melted and fully incorporated. Be sure to scrape the bottom of the pan to loosen any flavorful browned bits. Remove the skillet from the heat.
  3. Combine Gnocchi and Peas: Gently fold in the cooked gnocchi and frozen peas into the creamy ham sauce, mixing until everything is evenly coated and combined.
  4. Broil Topping: Sprinkle the remaining ½ cup gruyere and the parmesan cheese evenly over the top of the gnocchi mixture. Transfer the skillet under the preheated broiler set to high and cook for 5 to 7 minutes, or until the cheese is melted, bubbling, and lightly browned on top. Remove from the oven and serve hot.

Notes

  • Ensure gnocchi is fully cooked according to package directions before adding to the sauce.
  • You can substitute frozen peas with fresh peas if in season for a sweeter flavor.
  • Keep a close eye on the broiler to avoid burning the cheese topping.
  • Fresh rosemary provides the best flavor but dried rosemary can be used; reduce quantity to 1 teaspoon if dried.
