Instructions

  1. Cream Butter and Sugars: Using a stand or handheld mixer, cream the softened butter with brown sugar and granulated sugar at medium speed until the mixture is light and creamy. Add the egg, vanilla extract, molasses, and lemon juice (if using), scraping down the sides of the bowl as needed to ensure even mixing. Set this wet mixture aside.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, salt, ground ginger, ground cloves, and ground nutmeg. Then, add the rolled oats and whisk to combine them evenly with the dry ingredients.
  3. Mix Wet and Dry Ingredients: With the mixer on low speed, gradually add the dry ingredients to the wet ingredients. The dough will be quite thick, so finish mixing by hand using a wooden spoon.
