This Creamy Jalapeño Chicken Skillet is a flavorful, comforting one-pan meal that combines tender, juicy chicken breasts with a rich, creamy sauce infused with fresh jalapeños for a spicy kick. Perfect for busy weeknights or cozy dinners, this dish features a harmonious blend of savory spices, cheddar cheese, and fresh cilantro, all cooked together in a quick and easy skillet recipe.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Sauce and Vegetables

  • 2 tablespoons olive oil
  • 1 medium diced onion
  • 2 cloves minced garlic
  • 12 sliced fresh jalapeños (adjust to taste)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Prepare the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, black pepper, and paprika on both sides. Cook the chicken breasts for 5-7 minutes per side until they are golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté Vegetables: In the same skillet, add the diced onion and sliced jalapeños. Sauté for 3-4 minutes until the onion is softened and the jalapeños have released their flavor. Then add the minced garlic and cook for another minute until fragrant.
  3. Create the Sauce Base: Pour the chicken broth into the skillet with the vegetables and bring it to a gentle simmer. Stir in the heavy cream and allow the sauce to cook for 2-3 minutes until it thickens slightly.
  4. Add Cheese for Creaminess: Stir in the shredded cheddar cheese, mixing continuously until the cheese is completely melted and the sauce becomes smooth and creamy.
  5. Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet, spooning the creamy jalapeño sauce over them to coat evenly. Let everything warm through for a couple of minutes, then sprinkle freshly chopped cilantro on top before serving.

Notes

  • You can adjust the number of jalapeños to suit your preferred spice level; deseed them to reduce heat.
  • Use full-fat heavy cream and sharp cheddar cheese for the best richness and flavor.
  • Serve this dish over rice, cauliflower rice, or with a side of steamed vegetables for a complete meal.
  • Leftovers keep well in the refrigerator for up to 3 days; reheat gently to avoid breaking the sauce.
  • For a dairy-free version, substitute heavy cream and cheddar with coconut cream and a vegan cheese alternative.
