Ingredients

Scale

Muffin Batter

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg, lightly beaten
  • 3/4 cup milk
  • 1/3 cup unsalted butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups pitted cherries (fresh or frozen)

Streusel Topping

  • 1/3 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, softened

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or greasing it well to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk the lightly beaten egg, milk, melted unsalted butter, and vanilla extract until the mixture is smooth and homogenous.
  4. Blend Batter: Gently fold the wet ingredient mixture into the dry ingredients just until combined to avoid overmixing. Fold in the pitted cherries carefully to distribute them evenly without breaking them up.
  5. Prepare Streusel: In a small bowl, mix together brown sugar, all-purpose flour, and ground cinnamon. Cut in the softened butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  6. Fill Muffin Cups: Spoon the cherry batter into the muffin cups, filling each about three-quarters full to allow room for rising. Evenly sprinkle the streusel topping over each muffin.
  7. Bake: Bake the muffins in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
  8. Cool: Remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely for best texture and taste.

Notes

  • Fresh or frozen cherries can be used; if using frozen, do not thaw to prevent excess moisture.
  • For a dairy-free version, substitute milk with almond or oat milk and use dairy-free butter.
  • These muffins freeze well; store in an airtight container in the freezer for up to 2 months.
  • To enhance flavor, try adding a teaspoon of lemon zest to the batter.
  • Ensure not to overmix the batter to keep the muffins tender and light.
