Ingredients

Scale

Brownie Batter:

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup all-purpose flour

Cheesecake Swirl:

  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 cup powdered sugar
  • 1 large egg

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper to prevent sticking and make removal easier.
  2. Make brownie batter: In a large bowl, combine the melted unsalted butter and granulated sugar, stirring until smooth. Add the eggs one at a time, whisking thoroughly after each addition to incorporate air. Stir in the unsweetened cocoa powder and all-purpose flour until just combined, being careful not to overmix.
  3. Prepare cheesecake mixture: In a separate bowl, beat the softened cream cheese with sour cream until smooth and creamy. Gradually add the powdered sugar and mix until fully incorporated. Add the egg and beat until the mixture is smooth and combined.
  4. Assemble layers: Pour half of the brownie batter into the prepared baking dish, spreading it evenly. Spoon dollops of the cheesecake mixture over the brownie layer. Pour the remaining brownie batter on top and use a knife or skewer to gently swirl the cheesecake mixture into the brownie batter, creating a marbled effect.
  5. Bake: Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out with moist crumbs but not wet batter.
  6. Cool and serve: Allow the cheesecake brownies to cool completely in the pan on a wire rack before slicing into squares. This helps them set and makes cutting easier.

Notes

  • For best results, use room temperature cream cheese to avoid lumps in the cheesecake mixture.
  • You can line the baking dish with parchment paper for easy removal and cleaner edges.
  • Do not overbake; the brownies should be moist inside.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Allow brownies to come to room temperature or warm slightly before serving for optimal flavor and texture.
