  • ½ cup diced yellow onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 2 tablespoons taco seasoning
  • 8 ounces Colby jack cheese, shredded
  • 12 ounces bag of tortilla chips (Tostitos brand – use about of the bag)

  • Chopped fresh cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C) and generously spray a 12-cup capacity bundt pan with cooking spray to prevent sticking.
  2. Cook Beef Mixture: In a large skillet over medium-high heat, cook the lean ground beef, diced onion, salt, and black pepper for 6–7 minutes until no pink remains. Drain any excess fat from the skillet.
  3. Add Seasoning: Return the skillet to medium heat, stir in ¼ cup water and 2 tablespoons taco seasoning. Cook for 2–3 more minutes until most of the liquid evaporates, then remove from heat.
  4. Layer Ingredients: Layer half of the shredded Colby jack cheese evenly into the bottom of the prepared bundt pan. Next, add half of the cooked beef mixture, followed by about ⅓ of the tortilla chips scattered loosely. Avoid packing down the chips to maintain crispiness.
  5. Repeat Layers: Add the remaining shredded cheese, the rest of the ground beef mixture, and another ⅓ of tortilla chips on top, spreading evenly without overfilling the pan.
  6. Bake: Place the bundt pan in the preheated oven and bake for about 10 minutes, until the cheese is melted and bubbly.
  7. Invert Nachos: Carefully remove the bundt pan from the oven. Place a large, heatproof plate over the bundt pan, then invert it so the nachos drop onto the plate. Gently remove the bundt pan, and replace any cheese that may have stuck to the pan.
  8. Add Garnishes and Serve: Top the nachos with optional garnishes such as sour cream, diced tomatoes, and chopped fresh cilantro, and serve warm for a delicious party appetizer.

  • Use a well-greased bundt pan to ensure easy release of the nachos after baking.
  • Do not pack the tortilla chips down to keep them crispy instead of soggy.
