Bruschetta Topping

  • 6 roma tomatoes, chopped into 1/4” pieces
  • 1/2 cup fresh chopped basil
  • 2 cloves fresh chopped garlic
  • 2 tbsp balsamic vinegar
  • 1/2 tsp salt, divided
  • 1/2 tsp black pepper, divided

Cheese & Garnish

  • 4 oz shredded mozzarella cheese (about 1 cup)
  • Fresh chopped basil (for garnish)
  • Balsamic glaze (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 375˚F to ensure it’s hot enough for cooking the chicken evenly and melting the cheese perfectly.
  2. Prepare the Bruschetta Mixture: Chop the roma tomatoes into small 1/4″ pieces. Finely chop the fresh basil and garlic. In a large bowl, combine the chopped tomatoes, basil, and garlic. Add balsamic vinegar along with half of the salt and black pepper. Toss gently to mix all ingredients well.
  3. Arrange Chicken and Season: Lay the chicken breasts flat in the bottom of a large baking dish. Season each piece with the remaining salt and black pepper. Pour the tomato mixture evenly over the chicken breasts and use a spatula to spread it gently, covering all the chicken. Sprinkle the shredded mozzarella cheese evenly over the top.
  4. Bake the Chicken: Place the baking dish on the middle rack of the preheated oven. Bake for 35 to 45 minutes, or until the chicken reaches an internal temperature of 165˚F and the cheese is melted and slightly golden.
  5. Garnish and Serve: Remove the dish from the oven and let it rest for a few minutes. Top the baked chicken with fresh chopped basil and drizzle balsamic glaze over the top for added flavor. Serve hot and enjoy your delicious Bruschetta Chicken!
