Chicken
- 3–4 chicken breasts (about 2 lbs)
Bruschetta Topping
- 6 roma tomatoes, chopped into 1/4” pieces
- 1/2 cup fresh chopped basil
- 2 cloves fresh chopped garlic
- 2 tbsp balsamic vinegar
- 1/2 tsp salt, divided
- 1/2 tsp black pepper, divided
Cheese & Garnish
- 4 oz shredded mozzarella cheese (about 1 cup)
- Fresh chopped basil (for garnish)
- Balsamic glaze (for garnish)
- Preheat the Oven: Preheat your oven to 375˚F to ensure it’s hot enough for cooking the chicken evenly and melting the cheese perfectly.
- Prepare the Bruschetta Mixture: Chop the roma tomatoes into small 1/4″ pieces. Finely chop the fresh basil and garlic. In a large bowl, combine the chopped tomatoes, basil, and garlic. Add balsamic vinegar along with half of the salt and black pepper. Toss gently to mix all ingredients well.
- Arrange Chicken and Season: Lay the chicken breasts flat in the bottom of a large baking dish. Season each piece with the remaining salt and black pepper. Pour the tomato mixture evenly over the chicken breasts and use a spatula to spread it gently, covering all the chicken. Sprinkle the shredded mozzarella cheese evenly over the top.
- Bake the Chicken: Place the baking dish on the middle rack of the preheated oven. Bake for 35 to 45 minutes, or until the chicken reaches an internal temperature of 165˚F and the cheese is melted and slightly golden.
- Garnish and Serve: Remove the dish from the oven and let it rest for a few minutes. Top the baked chicken with fresh chopped basil and drizzle balsamic glaze over the top for added flavor. Serve hot and enjoy your delicious Bruschetta Chicken!

- If roma tomatoes are not available, plum tomatoes or cherry tomatoes can be used as substitutes.
