For the Blackberry Swirl:

  • ¾ cup blackberries (fresh or frozen)
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Instructions

  1. Make the Blackberry Swirl: In a small saucepan over medium heat, combine blackberries, sugar, and lemon juice. Stir and mash the berries gently as they cook for about 5 minutes until the mixture thickens. Strain to remove seeds for a smooth texture and set aside to cool.
  2. Prepare the Brownie Batter: Preheat oven to 325°F (163°C). Grease and line an 8×8-inch baking pan with parchment paper. Melt butter and chocolate together in a heatproof bowl using the microwave or double boiler. Stir until smooth and cool slightly. Whisk in sugar, eggs, and vanilla extract. Sift together flour, cocoa powder, and salt then gently fold into the wet mixture. Spread batter evenly in prepared pan.
  3. Make the Cheesecake Swirl: Beat softened cream cheese, sugar, egg, and vanilla until smooth. If desired, divide batter and mix melted dark chocolate into half for a chocolate swirl. Drop spoonfuls of the cheesecake mixture over brownie batter in the pan.
  4. Add the Blackberry Swirl: Spoon small dollops of the cooled blackberry sauce over the cheesecake layer. Using a skewer or knife, gently swirl the blackberry and cheesecake to create a marbled effect.
  5. Bake: Bake for 35–40 minutes until edges are puffed and set, but center still jiggles slightly. Remove from oven and cool completely in pan. Refrigerate for a few hours to firm up for easier slicing.
