  • ¼ cup water (for simmering taco seasoning)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook the Ground Beef: In a skillet over medium heat, brown the ground beef until fully cooked and no longer pink.
  3. Sauté Onions and Garlic: Add the chopped onions and minced garlic to the skillet with the beef and cook until the onions become soft and fragrant, about 3-4 minutes.
  4. Season the Meat: Stir in the taco seasoning and ¼ cup water with the beef mixture. Simmer for a few minutes until the mixture thickens and flavors meld together.
  5. Prepare the Casserole Dish: Spread a thin layer of salsa over the bottom of a 9×13-inch casserole dish to prevent sticking and add flavor.
  6. Layer Ingredients: Lay two tortillas on the bottom of the dish, then top with half of the refried beans, half of the beef mixture, and a generous sprinkle of the shredded cheeses.
  7. Repeat Layers: Add another layer starting with two more tortillas, then the remaining refried beans, beef mixture, and cheese. End with a final layer of tortillas topped with salsa and the remaining cheese.
  8. Bake the Casserole: Cover the dish with foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is melted, golden, and bubbly.
  9. Garnish and Serve: Remove the casserole from the oven, garnish with chopped cilantro, and serve each portion topped with a dollop of sour cream.
