Instructions

  1. Prepare the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the peeled and cubed sweet potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for about 25-30 minutes, or until golden and tender, tossing halfway through for even cooking.
