  • 2 lbs baby potatoes (red or yellow)
  • 3 tbsp olive oil
  • 1/2 cup grated Parmesan cheese

Garlic Dip

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 cloves roasted garlic, mashed
  • 1 tbsp lemon juice
  • 1 tbsp fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for roasting the potatoes.
  2. Boil the Potatoes: Place the baby potatoes into a large pot of salted water and bring to a boil. Cook them for 15–20 minutes until they are fork-tender but not falling apart. Drain the potatoes well.
  3. Smash the Potatoes: Transfer the drained potatoes onto the prepared baking sheet. Using the bottom of a glass or a potato masher, gently press each potato to flatten them slightly while keeping them mostly intact for texture.
  4. Season the Potatoes: Brush the smashed potatoes evenly with olive oil. Sprinkle grated Parmesan cheese, minced garlic, dried thyme, dried rosemary, salt, and black pepper over them to infuse rich flavor.
  5. Bake Until Crispy: Place the baking sheet in the oven and bake the potatoes for 25–30 minutes, or until they develop a crispy, golden-brown crust while remaining soft inside.
  6. Prepare the Garlic Dip: While the potatoes bake, combine sour cream, mayonnaise, mashed roasted garlic, lemon juice, chopped fresh chives, salt, and pepper in a small bowl. Mix well until the dip is smooth and creamy.
  7. Serve: Remove the potatoes from the oven, sprinkle freshly chopped parsley on top for color and freshness, and serve immediately alongside the garlic dip for dipping.
