Chicken & Seasoning

Mustard & Cooking
- 2 tablespoons Dijon mustard
- 1 heaping tablespoon coarse ground mustard
- 1 tablespoon extra-virgin olive oil
- Butterfly the chicken breasts: Cut each chicken breast horizontally so that it opens like a book, remaining attached on one side. This creates a pocket for the stuffing.
- Season and layer fillings: Sprinkle the insides of each chicken breast with kosher salt, black pepper, and dried thyme. Place a few pieces of baby spinach or arugula on one side of the butterflied chicken, then top evenly with about 3 slices of green apple and 3 slices of brie cheese.
- Close the chicken: Fold the chicken breasts back over to enclose the stuffing. Secure with toothpicks if desired, but not necessary.
- Prepare mustard glaze: In a small bowl, combine Dijon mustard and coarse ground mustard. Brush half of this mixture evenly over the tops of the chicken breasts.
- Heat the skillet and sear: Warm olive oil in a large skillet over medium-high heat. Place the chicken breasts mustard-side down in the pan. Brush the exposed side of each chicken breast with the remaining mustard mixture.
