Chicken & Seasoning

  • 4 (6 oz.) boneless skinless chicken breasts
  • Heaping 1/2 teaspoon kosher salt
  • 1/3 teaspoon black pepper
  • 1/2 teaspoon dried thyme (equivalent to about 2 teaspoons chopped fresh thyme)

Filling

  • Handful of baby spinach or arugula (optional)
  • 1/2 green apple, thinly sliced (about 12 slices)
  • 1/2 wheel brie cheese, sliced (about 12 slices)

Mustard & Cooking

  • 2 tablespoons Dijon mustard
  • 1 heaping tablespoon coarse ground mustard
  • 1 tablespoon extra-virgin olive oil

Instructions

  1. Butterfly the chicken breasts: Cut each chicken breast horizontally so that it opens like a book, remaining attached on one side. This creates a pocket for the stuffing.
  2. Season and layer fillings: Sprinkle the insides of each chicken breast with kosher salt, black pepper, and dried thyme. Place a few pieces of baby spinach or arugula on one side of the butterflied chicken, then top evenly with about 3 slices of green apple and 3 slices of brie cheese.
  3. Close the chicken: Fold the chicken breasts back over to enclose the stuffing. Secure with toothpicks if desired, but not necessary.
  4. Prepare mustard glaze: In a small bowl, combine Dijon mustard and coarse ground mustard. Brush half of this mixture evenly over the tops of the chicken breasts.
  5. Heat the skillet and sear: Warm olive oil in a large skillet over medium-high heat. Place the chicken breasts mustard-side down in the pan. Brush the exposed side of each chicken breast with the remaining mustard mixture.
  6. Sear both sides: Cook the chicken for 3-4 minutes per side until well browned, turning carefully to keep the filling inside.
  7. Finish cooking: After searing, cover the pan and reduce heat to just below medium. Cook for 5-8 minutes, depending on thickness, until the chicken is cooked through and the cheese is melted.
  8. Serve: Plate the stuffed chicken breasts and spoon any pan sauce over the top. Serve hot and enjoy.
